Moa Marinated Tomato Bruschetta

Moa Marinated Tomato Bruschetta


  • 6 Roma tomatoes, diced
  • ½ cup sun-dried tomatoes packed in olive oil, diced
  • 3 cloves garlic, minced
  • ¼ cup fresh basil, julienned
  • ½ cup Moa
  • salt and pepper to taste
  • 1 cup mozzarella cheese, shredded
  • 1 French baguette

*Use organic whenever possible!


  1. Preheat oven on broiler setting.
  2. In a large bowl, combine Roma tomatoes, sun-dried tomatoes (+3 tablespoons packing olive oil from sun-dried tomatoes), garlic, basil, Moa, salt, and pepper to taste. Allow mixture to marinade for approximately 10 minutes.
  3. Cut the baguette into slices and arrange in a single layer on a baking sheet. Place under broiler for approximately 1-2 minutes or until lightly brown.
  4. Divide the marinated tomato mixture evenly over the toasted baguette slices and top with a sprinkling of the shredded mozzarella.
  5. Place under broiler for another 5 minutes or until cheese is melted. ENJOY!
