PureNourish Cookies—Three Flavors

 

Cocoa Cookies

Serving: 14 Cookies
3 scoops PureNourish
1 heaping scoop Power Boost
½ teaspoon baking powder
2 egg whites, room temperature
Pinch salt
½ teaspoon vanilla

Position rack in middle of oven and preheat to 350 degrees. Grease baking pan by rubbing with a thin coat of coconut oil.
In a small bowl whisk 3 scoops of PureNourish with 1 scoop Power Boost and ½ teaspoon baking powder. Set aside. In a larger bowl whisk 2 room temperature egg whites with a tiny pinch of salt to stabilize the eggs until they form soft peaks. Now mix the beaten egg whites into the PureNourish mixture blending with a spatula until the mixture becomes like a smooth, thick batter. Add the vanilla and mix again.
Drop cookie mixture onto prepared baking pan. You can gently press just a little (moisten finger with coconut oil) to flatten the cookie because they do not spread. Bake for approximately 8 minutes. Watch carefully because they bake fast. They will continue to cook after they are removed from the oven.

Orange Spice Almond Cookies

Serving: 14 Cookies
3 scoops PureNourish
5 heaping scoops Beauty Boost
½ teaspoon baking powder
Pinch stevia
½ teaspoon cinnamon
2 egg whites, room temperature

Pinch salt
½ teaspoon vanilla
Sliced almonds for topping

Position rack in middle of oven and preheat to 350 degrees. Grease baking pan by rubbing with a thin coat of coconut oil.
In a small bowl whisk 3 scoops PureNourish, Beauty Boost, ½ teaspoon baking powder, a tiny pinch of stevia, and the cinnamon. Set aside. In a larger bowl whisk 2 room temperature egg whites with a pinch of salt until they form soft peaks. Mix the beaten egg whites into the PureNourish mixture and blend with a spatula until the mixture is like a smooth batter and stir in the vanilla.

Drop cookie mixture onto prepared baking pan and put 2–3 almond slices on top of each cookie. You can gently press just a little (moisten finger with coconut oil) to flatten the cookie because they do not spread. Bake for approximately 8 minutes. Watch carefully because they bake fast. They will continue to cook after they are removed from the oven.

Vanilla Cookies

Serving: 14 Cookies
4 scoops PureNourish
Pinch stevia
2 egg whites, room temperature
Pinch salt
2 tablespoons lemon juice
¼ teaspoon vanilla
Berries or almond butter for topping
Position rack in middle of oven and preheat to 350 degrees. Grease baking pan by rubbing with a thin coat of coconut oil.

In a small bowl whisk the 4 scoops PureNourish with a pinch of stevia and set aside. Whisk 2 room temperature egg whites with a pinch of salt until they form soft peaks. Combine the PureNourish and stevia with the beaten egg whites until it becomes a batter and then stir in the lemon juice and vanilla. This batter could be a little thinner than the other two recipes. The lemon juice really does not come thru that much but gives a nice tang.

Drop cookie mixture onto prepared baking pan and push 1–2 small berries for 1/8 teaspoon of almond butter into the center of each cookie. You can gently press just a little (moisten finger with coconut oil) to flatten the cookie because they do not spread. Bake for approximately 8 minutes. Watch carefully because they bake fast. They will continue to cook after they are removed from the oven.

Note: These cookies do not need sweeteners; their flavors improve the next day. Let the cookies rest for a couple of hours before eating.
